The farmer, Mr Solomen Francis, grows this coffee on his estate which is located right next to the Muthodi forest range. The forest is part of the Bhadra Tiger Reserve , an hour’s drive from Chikmagalur. The estate is surrounded by rich flora and fauna and often visited by the numerous wild animals which inhabit the forest.
Solomon Francis selectively harvest his cherries a peak ripeness. The cherries are pulped on the same day as picking and then fermented to break down the remaining mucilage. The coffee is then washed in clean water and sun dried on a cemented patio for around 8 days.
Roasting the beans
We roast these particular beans for a little bit longer than some, just to give the coffee a little bit more punch if used in a milky drink. We find this coffee ideal as an espresso.
